Fresh Tomato Pasta
- 4 cups Tomato, Coarsely Chopped
- 2 cups Sliced Green Onion, 1/2" Slice
- 2 cups Sliced Celery, 1/2" Slice
- 1/4 cups Pesto
- 4 cups Cooked Pasta Of Your Choice
- Parmesan Cheese, Optional Garnish
- Put all of the ingredients into a large sauce pan.
- Over medium-high heat, bring to boil.
- Cover the pan, lower the heat and cook on medium for 5 minutes.
- Serve over hot pasta, and top with parmesan cheese.
- I can eat this out of the refrigerator the next morning for breakfast.
- I only make this when the tomatoes in my garden are ripe.
