Healthy Sloppy Joes

  1. In a large saute pan (with lid) cook ground beef on medium-high heat until browned.
  2. If necessary, drain any fat from pan.
  3. Add garlic and stir to combine.
  4. Add carrots and spinach to ground beef and stir until the spinach begins to wilt (approximately 1-2 minutes).
  5. Add remaining ingredients (beans, tomatoes, green onion, mustard, vinegar, ketchup and maple syrup).
  6. Reduce heat to medium and cover the pan.
  7. Allow mixture to simmer, stirring occasionally, until completely cooked (approximately 8-10 minutes).
  8. Remove from heat.
  9. Toast the buns (if desired) and spoon mixture onto buns.
  10. I added another handful of fresh spinach and some additional shredded carrots to the mixture right before serving so the Sloppy Joes would have a little fresh veggie crunch.
