Swiss Cheese Fondue Recipe from The Melting Pot - Swiss Cheese Fondue

  1. Place cheese in plastic bag.
  2. Sprinkle with flour.
  3. Toss until cheese is coated.
  4. Rub cut clove of garlic on bottom and sides of 3-quart saucepan.
  5. Add wine.
  6. Heat over low heat just until bubbles rise to surface (do not boil).
  7. Stir in lemon juice.
  8. Add cheese, about 1/2 cup (125 ml) at a time, stirring constantly with wooden spoon.
  9. Stir until cheese is melted.
  10. Stir in Kirsch.
  11. Pour into ceramic fondue pot over low heat.
  12. Use long-handled forks to spear bread cubes.
  13. Dip and swirl bread in fondue.
