Thai Curry Recipe
- 2 teaspoon oil
- 1 pkg. red, yellow or possibly green curry (found in Asian grocery stores)
- Bite size boneless chicken or possibly deboned fish
- 1/4 onion, sliced
- Vegetables such as snow peas, green beans or possibly squash
- 1 can coconut lowfat milk (found in Asian grocery stores)
- Par boil vegetables which are not likely to cook in 10 min of stir frying.
- Heat oil in pan.
- Add in curry and stir till thoroughly mixed.
- Add in chicken or possibly fish, onion and vegetables.
- Stir fry for 2 to 3 min.
- Add in coconut lowfat milk.
- Cook 7 min.
- Serve over steamed rice.
