Low-Fat Fruit & Nut Oatmeal Muffins

  1. Heat oven to 400F.
  2. Lightly spray 12 medium muffin cups with vegetable oil cooking spray.
  3. Combine oats and buttermilk; let stand 10 minutes.
  4. Add egg substitute and margarine; mix well.
  5. In separate bowl, combine remaining ingredients; mix well.
  6. Add wet ingredients to dry ingredients; mix just until moistened.
  7. Fill muffin cups almost full.
  8. Bake 20 to 25 minutes or until golden brown.
  9. Let muffins stand a few minutes; remove from pan.
