Smoked Chicken Fillet and Avocado Vinaigrette
- 1 smoked chicken fillet
- 1 ripe firm avocado
- 1 handful wasabi peas or 1 handful hazelnuts
- 1 tablespoon white wine vinegar
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 pinch salt
- 1 teaspoon fresh ground pepper
- 12 teaspoon Dijon mustard
- Combine the vinegar, olive oil, lemon juice, salt, pepper, and mustard in a closed container and shake vigorously.
- Slice the chicken fillet.
- Slice the avocado.
- Arrange in alternating slices on a plate.
- Scatter hazelnuts or wasabi peas over the top.
- Drizzle dressing over it.
