Creamy Potato Salad
- 2 12 lbs red potatoes, diced (skins on or off, whichever you prefer)
- 6 hard-boiled eggs, diced
- 3 large celery ribs, diced
- 1 small bunch green onion, chopped
- 2 cups mayonnaise
- 1 cup dill
- 12 cup chives
- salt
- pepper
- Boil potatoes in salted water until tender.
- Drain and allow to cool slightly.
- Put potatoes in large bowl and add all other ingredients.
- Fold gently until the salad is well combined.
- Taste and adjust seasoning.
- Chill at least three hours before serving.
