Lobster Bisque

  1. Combine milk, cream, onion and seasonings in top of double boiler or in small steam-jacketed kettle; heat just until scalded.
  2. Stir in tapioca; cook 5 minutes, stirring frequently.
  3. Add lobster and butter; mix well.
  4. Reduce heat to medium-low; simmer 30 minutes, stirring occasionally.
