Lobster Bisque
- 1-1/4 gal. milk
- 1-1/2 qt. light cream or half-and-half
- 1/3 cup onions, finely chopped
- 2 Tbsp. salt
- 3/4 tsp. black pepper
- 3/4 tsp. paprika
- 1 cup instant tapioca
- 1-1/2 qt. cooked lobster, flaked
- 1 cup butter
- Combine milk, cream, onion and seasonings in top of double boiler or in small steam-jacketed kettle; heat just until scalded.
- Stir in tapioca; cook 5 minutes, stirring frequently.
- Add lobster and butter; mix well.
- Reduce heat to medium-low; simmer 30 minutes, stirring occasionally.
