Creamy Spinach Salad With Chicken and Baby Tomatoes
- 6 ounces fresh spinach
- 1 tablespoon lemon juice
- 3 tablespoons mayonnaise
- 2 chicken breasts
- 10 ounces baby tomatoes
- 6 slices bacon
- 1 -1 12 cup crouton
- 2 tablespoons green onions or 2 tablespoons chives
- salt and pepper, for chicken

- Use a food processor to mince the spinach.
- Add mayo and lemon juice and mix until well combined and creamy.

- Season chicken with salt and pepper and saute until cooked through.
- Cool chicken to room temperature Dice into 1/2-inch chunks.

- Dry/drain on paper towels .
- Chop bacon.
