Cabbage Burger Bake

  1. Quarter and shred cabbage (you should have about 8 cups). Spread half in buttered, shallow, 12-cup baking dish.
  2. Saute bacon just until fat starts to cook out in a large frying pan.
  3. Remove; drain and set aside for later.
  4. Stir onion and rice into bacon drippings in frying pan; cook, stirring constantly, over medium heat until onion is soft and rice is lightly browned.
  5. Spoon over cabbage in baking dish.
  6. Shape ground beef and pork into 1 large patty in same frying pan.
  7. Brown 5 minutes on each side, then break up into crumbs.
  8. Cook, stirring often, a few minutes longer or until no pink remains.
  9. Spoon over rice mixture in baking dish. Sprinkle with salt and pepper.
  10. Top with remaining cabbage.
