Caramelized Onion Jam Recipe
- 2 Tbsp. extra virgin olive oil
- 2 lrg white onions peeled, and thinly sliced - (abt 4 c.)
- 2 Tbsp. brown sugar
- 2 Tbsp. rice vinegar
- 1 1/2 Tbsp. minced golden brown raisins Salt to taste Freshly-grnd black pepper to taste
- Heat extra virgin olive oil over medium heat in large skillet.
- Cook onions, stirring occasionally, till just turning color.
- Add in sugar and continue to cook till onions are a rich, golden and very soft, 15 to 20 min total.
- If onions are browning too quickly, add in 1 Tbsp.
- water.
- Stir in vinegar and raisins and season to taste with salt and pepper.
- This recipe yields 1 1/2 c..
- Wine Suggestions: Complement this recipe with a rich Cabernet, Merlot or possibly Syrah.
- Comments: You can caramelize the onions 1 day ahead and chill them in a sealed container.
- Yield: 1 1/2 c.
