Herb Roast

  1. Mix herbs and seasonings together.
  2. Rub seasoning mixture completely over roast.
  3. Wrap roast in foil, sealing ends and edges, but leave room for steam.
  4. For more flavor, let roast stand for 30 - 60 minutes.
  5. To cook, leave roast in foil.
  6. Place in a roasting pan and cook at 325 degrees for 20-25 minutes per pound or until desired level of doneness.
  7. Let the roast stand for 5 minutes.
  8. Remove from foil, saving drippings for gravy.
  9. Slice and serve.
