Somen Noodles in Soup with Pork and Kimchi

  1. Cut the pork into suitable bite sizes.
  2. Mix the pork with kimchi, seasoning with a little soy sauce and sake.
  3. Slice the scallion diagonally, and cut the Chinese chives into 3 cm thickness.
  4. Heat a pan, and pour a little oil.
  5. Stir fry the ginger and leek.
  6. When it's aromatic, add the pork and kimchi to the pan.
  7. When the pork changes colour, pour 4 cups of water to the pan to boil.
  8. Remove the scum and add the somen noodles.
  9. Keep cooking for a while.
  10. Add the Chinese chives, 2 teaspoons of usukuchi soy sauce, and season with salt if needed and serve.
