Lentil Tacos
- 1 Tablespoon Olive Oil
- 1 can Lentils (19oz Can), Drained And Rinsed
- 1 cup Canned Diced Or Stewed Tomatoes
- 8 Tortillas
- Whatever Condiments You'd Like!
- 1 Tablespoon Chili Powder
- 3/4 Tablespoons Garlic Powder
- 3/4 Tablespoons Onion Powder
- 1 teaspoon Crushed Red Pepper Flakes
- 3/4 teaspoons Dried Oregano
- 1/2 teaspoons Paprika
- 1- 1/2 teaspoon Ground Cumin
- 1 teaspoon Sea Salt
- 1 teaspoon Ground Black Pepper
- I seasoned this with my trusty home-blended taco/chili seasoning.
- You could use pre-packaged taco seasoning if youd prefer, but Ill provide you with my seasoning ingredients in case you want to give that a whirl.
- Use the entire batch of seasoning mix as posted here!
- For the seasoning mix: Combine all ingredients in a small bowl.
- Set aside.
- For the tacos: Heat the olive oil in a pan over medium heat.
- Add the lentils (dont forget to rinse them to reduce the sodium), tomatoes and all of the seasoning mix.
- Cook for approximately 10 minutes, and be sure to mix well so that the seasoning is evenly distributed.
- Place the lentil mixture onto tortillas as desired.
- For condiments, I used some lettuce, plain Greek yogurt and smashed avocado.
- Chopped up scallions would have made this perfect, but alas, I had none.
- Boo hiss.
