Fig Jam

  1. I used a pack of 5 ripe figs.
  2. Peel the skin and quarter.
  3. Place the figs from Step 2 into an enamel pot.
  4. Add the sugar and mix.
  5. Let sit for about 5 minutes, then turn on the heat.
  6. While Step 3 is heating, remove any scum from the surface, and mash the figs with the back of a ladle as the liquid boils down.
  7. Add the lemon juice and continue heating until thickened.
  8. Store in a sterilized jar.
