Macaroni With Chicken, Broccoli and Tomatoes
- 2 cups macaroni
- 2 tablespoons vegetable oil
- 1 boneless skinless chicken breast, cut into bite-size pieces
- 2 garlic cloves, minced
- 2 cups bite-sized pieces broccoli (fresh or frozen)
- 2 cups sliced fresh mushrooms
- 1 (28 ounce) can tomatoes
- 1 teaspoon oregano
- salt and pepper
- 2 tablespoons fresh parsley, chopped
- parmesan cheese, grated
- Cook macaroni.
- Meanwhile, heat oil in large skillet and saute chicken, garlic, broccoli, and mushrooms for 3-4 minutes.
- Add tomatoes and oregano, bring to a boil.
- Simmer for 5 minutes, stirring occasionally.
- Season to taste with salt and pepper.
- Toss with macaroni and parsley.
- Serve with Parmesan Cheese,.
