Crunchy Candied Dried Young Anchovies

  1. Roast the dried young anchovies in a pan for a few minutes.
  2. Once crispy, add the sugar, mirin and soy sauce.
  3. Reduce the heat to low and continue to fry.
  4. Add sake and vegetable oil.
  5. Cook until the fish have absorbed all the seasoning liquid.
  6. Space out on a tray, sprinkle with white sesame seeds, and enjoy.
  7. I packed these candied dried young anchovies in my Osechi (New Year's feast) box.
