Minted Cucumber Nojitos
- 12 cup lemon juice
- 13 cup lime juice
- 1 cup fresh mint leaves, loosely packed
- 12 cup simple syrup
- 1 small cucumber, very thinly sliced
- ice cube
- 4 cups lemonade, chilled
- 1 (1 liter) bottle club soda, chilled
- In a large pitcher combine lemon and lime juice.
- Add mint leaves and Simple Syrup.
- Using a muddler or the back of a spoon crush leaves and stir together well.
- Add cucumber slices and ice cubes.
- Pout lemonade and club soda into pitches.
- Serve immediately.

- 1 cup water.
- 1 cup sugar.
- In a small saucepan combine water and sugar.
- Bring to a boil over medium heat, stirring until sugar dissolves.
- Cook until the mixture is completely clear and the surface is covered with bubbles.
- Remove from heat.
- Allow to cool.
- Transfer to a container.
- Store, tightly covered, in the refrigerator for up to 2 weeks.
