Tavern Pumpkin Muffins Recipe
- 1 (1 lb.) can pumpkin (Libby's)
- 2 tbsp. melted butter
- 4 Large eggs
- 1 1/4 c. flour
- 2 c. sugar
- 1 1/2 tbsp. baking pwdr
- 1 teaspoon salt
- 3/4 tbsp. nutmeg
- 3/4 tbsp. cinnamon
- 1/2 c. lowfat milk
- 1 c. raisins
- 1 tbsp. vanilla
- Mix dry ingredients.
- Mix wet ingredients except lowfat milk.
- Blend dry ingredients with wet and slowly add in lowfat milk, stirring constantly.
- Add in raisins and vanilla and mix.
- Pour batter into greased muffin tins and bake in 375 degree oven till golden brown.
