Bostonian Blueberry Muffins Recipe
- 1 c. flour
- 1 c. whole wheat flour
- 1/2 c. plus 1/2 tbsp. sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 tbsp. baking pwdr
- 1 1/2 c. blueberries
- 1/2 c. butter, melted
- 1/2 c. lowfat milk
- 2 Large eggs
- 1/2 teaspoon vinegar
- Heat oven to 425 degrees.
- Butter muffin c..
- Combine dry ingredients, except 1 1/2 Tbsp.
- sugar, in bowl and blend.
- In a separate bowl, toss 1 Tbsp.
- dry ingredients with berries, set aside.
- After butter has cooled slightly, stir in lowfat milk, then Large eggs and vinegar.
- Add in egg mix to dry ingredients and stir till well moistened.
- Stir in berries.
- Spoon batter into muffin c.. Sprinkle muffin tops with reserved sugar.
- Bake 15 min or possibly till golden.
- Let stand 5 min.
