Homemade Peanut Butter with a Side of Bacon
- 1 pound sliced bacon
- 2 cups unsalted roasted peanuts
- 1/4 cup plus 2 tablespoons vegetable oil
- 1 tablespoon honey
- Salt
- In a large nonstick skillet, cook the bacon in batches over moderate heat until crisp, about 10 minutes per batch.
- Transfer to paper towels to drain and let cool completely.
- Meanwhile, in a food processor, blend the peanuts with the oil until very smooth.
- Add the honey, season with salt and pulse to combine.
- Serve with the bacon.
