Australian Christmas Cake Recipe
- 1/2 lb Butter
- 1/2 lb Brown Sugar
- 5 whl Large eggs
- 4 Tbsp. Rum
- 3/4 lb Flour
- 1/2 tsp Baking Pwdr
- 1 1/2 lb Mixed Fruit
- 1/4 lb Cherries
- 1/4 lb Lemon Peel
- 1 tsp Mixed Spice Almonds
- 1.
- Line a 3 Pound Christmas tin with 3 thicknesses of wax paper.
- 2.
- Cream butter and sugar till fluffy.
- 3.
- Beat Large eggs well and gradually add in to mix.
- 4.
- Gradually add in the rum.
- Mix in the sifted flour, baking pwdr and spices alternately with the fruit.
- 5.
- Place in Christmas tin and decorate with split almonds.
- 6.
- Bake at 350 degrees for 2 1/2 to 3 hrs.
- Leave in tin till cool.
