Chicken Pot Pie Sandwich
- 4 -6 sandwich crescent rolls
- 10 oz frozen broccoli
- 1/4 cup margarine
- 1/4 cup plus 2 tbsp gluten-free biscuit mix
- 1 tsp ground ginger
- 1/2 tsp garlic powder
- 2 cup chicken broth
- 2 tbsp lemon juice
- 2 cup shredded cooked chicken
- 4 oz mushroom stems & pieces, drained
- Cook broccoli according to package directions, drain &cut into small pieces & set aside.
- Melt margarine in 3 qt saucepan.
- Stir in biscuit mix, ginger, & garlic powder.
- Then stir in broth & lemon juice.
- Heat to boiling, stirring constantly.
- Boil & stir 1 minute; reduce heat.
- Stir in broccoli, chicken, & mushrooms.
- Heat through.
- Spoon into the sandwich crescents & serve.
