Baked Ham
- 1 18-pound smoked ham, bone in
- 1 cup white vinegar
- 1 tablespoon ground cloves
- 1 teaspoon nutmeg
- Freshly ground pepper to taste
- 1 cup dark brown sugar
- 1/2 teaspoon mace
- 2 tablespoons American-style spicy mustard
- Juice of one orange
- Preheat the oven to 425 degrees.
- Remove the skin from the ham, if necessary, leaving at least a one-half-inch-thick layer of fat around it.
- Score the ham, place it in a large baking pan and pour the vinegar over it.
- Combine half of the ground cloves, all the nutmeg and pepper and rub all over the ham.
- Bake for 30 minutes.
- Lower the temperature to 325 degrees and bake for three and one-half hours.
- Meanwhile, in a small bowl, combine the brown sugar, mace, mustard, orange juice and remaining ground cloves.
- After the baking is finished, turn off the oven and brush the ham with the mixture.
- Return the ham to the turned-off oven for 30 minutes.
