Mango and Red Cabbage Slaw

  1. In a large bowl, toss the red cabbage with salt and pepper.
  2. In a medium bowl, whisk the vinegar with the sugar and salt until they dissolve.
  3. Pour the vinegar over the cabbage and toss well.
  4. Let stand at room temperature for 2 hours.
  5. Add the mango and sesame seeds to the cabbage and toss well.
  6. Transfer the slaw to platters, garnish with the scallions and sesame oil and serve.
