Sweet Potato Bites
- 600 grams Sweet potato
- 70 grams Butter
- 100 grams Light brown sugar (or white sugar)
- 2 Egg yolks
- 4 tbsp Heavy cream (or half cream, half milk)
- 1 tbsp Rum
- 1 few drops Vanilla oil
- 1 Egg yolk for brushing
- Peel the sweet potatoes and cut into 3 cm chunks.
- Put in a bowl, wrap, and microwave until they are soft enough for a skewer to pierce easily.
- Mash while hot.
- Then, while still warm, add the butter and sugar and mix well.
- Mix in the egg yolk.
- Once mixed, add the cream and rum and mix well.
- Once it's thoroughly mixed, pass through a strainer.
- This is the strained mixture.
- Preheat the oven to 180-190C.
- Form into your desired shape and brush the tops with egg yolk.
- Once the oven has heated to 180 -190C and bake for about 10-20 minutes on the top rack.
- Once they have lightly browned, they are ready.
- Be careful not to over-bake!
- Once I brushed with the egg yolk, I used a cookie stamp to stamp "POTATO" on them.
- But, you can't see it too well.
- I also uploaded a soft-cream style sweet potato which tastes similar.
