Sweet Potato Bites

  1. Peel the sweet potatoes and cut into 3 cm chunks.
  2. Put in a bowl, wrap, and microwave until they are soft enough for a skewer to pierce easily.
  3. Mash while hot.
  4. Then, while still warm, add the butter and sugar and mix well.
  5. Mix in the egg yolk.
  6. Once mixed, add the cream and rum and mix well.
  7. Once it's thoroughly mixed, pass through a strainer.
  8. This is the strained mixture.
  9. Preheat the oven to 180-190C.
  10. Form into your desired shape and brush the tops with egg yolk.
  11. Once the oven has heated to 180 -190C and bake for about 10-20 minutes on the top rack.
  12. Once they have lightly browned, they are ready.
  13. Be careful not to over-bake!
  14. Once I brushed with the egg yolk, I used a cookie stamp to stamp "POTATO" on them.
  15. But, you can't see it too well.
  16. I also uploaded a soft-cream style sweet potato which tastes similar.
