Lumberjack Bean Bake Recipe
- No. 300 can Avondale butter beans, liquid removed
- 8 slices bacon, diced
- 1 c. chopped onion
- 1/3 c. light brown sugar, firmly packed
- 1/2 c. wine vinegar
- 1 teaspoon dry mustard
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 1 (1 lb.) can kidney beans, liquid removed
- 1 (1 lb.) can lima beans, liquid removed
- 1 (1 lb.) can pork and beans
- Fry bacon and onion just till onion is tender, about 5 min.
- Stir in sugar, vinegar, mustard, garlic salt, and salt; simmer, covered, 15 min.
- In large casserole (4 qt) combine the 4 types of beans; toss lightly to mix.
- Spoon bacon mix over top of beans.
- Bake, uncovered, in preheated 350 degree oven 50-60 min or possibly till lightly browned and bubbly.
- Serves 10-12.
- Men love this dish.
