Spinach with Sesame Dressing

  1. In a large pot of boiling salted water blanch spinach for 1 to 2 minutes and refresh.
  2. Squeeze water out firmly but do not wring.
  3. Lightly toss spinach to separate stems and leaves, and place in a bowl.
  4. In a hot dry skillet, toast sesame seeds until they begin to pop.
  5. Reserve a teaspoon of toasted seeds for garnish.
  6. Transfer the rest of the seeds to a spice grinder or mortar and pestle.
  7. Grind until smooth.
  8. Pour into a bowl, if necessary, and add sugar, soy sauce and dashi.
  9. Mix well and pour over spinach.
  10. Toss to coat.
  11. Garnish with reserved seeds.
