New Mexico Pot Pie

  1. Preheat oven to 375 degrees.
  2. Prepare corn muffin mix batter, set aside.
  3. Brown ground beef; drain and rinse grease off.
  4. Combine picante sauce, beef, corn.
  5. Let simmer for about 10-15 minutes.
  6. Pour mixture into greased casserole dish.
  7. Top with cheese.
  8. Pour corn muffin mix over top and spread out to form a "pot pie crust".
  9. Bake about 15-20 minutes or until golden brown.
  10. Use the crushed pepper and salt & pepper to taste in the ground beef mixture.
  11. I also mix in a little cheese and crushed red pepper to the corn bread mixture to give it a little zing!
