Green Chile Stroganoff
- 14 cup butter
- 1 medium onion, chopped
- 1 (4 ounce) can mushrooms, sliced
- garlic, to taste
- 2 lbs lean beef, cubed
- 2 cups water
- 2 beef bouillon cubes
- 1 (4 ounce) can green chilies, chopped
- 1 cup sour cream
- 1 (8 ounce) package noodles, cooked
- Saute the onion and mushrooms in butter with the garlic.
- Brown the beef in the mix.
- Drain off excess fat.
- Add the water and bouillon.
- Cover and simmer 2 hours.
- Add the green chiles and simmer 10 more minutes.
- Remove from heat and stir in sour cream.
- Serve over noodles.
