Turkey Meatball Subs
- 1- 1/2 pound Ground Turkey
- 1/2 cups Bread Crumbs
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregano
- 1/2 cups Grated Parmesan
- 1 whole Large Egg
- 2 Tablespoons Olive Oil
- 1 Tablespoon Montreal Steak Spice
- 3 Tablespoons Chopped Parsley
- 1 whole Roasted Red Pepper, From A Jar, Chopped
- 1/2 teaspoons Garlic Salt
- 8 whole 6" Subs
- 2 cups, 11 tablespoons, 2- 3/4 teaspoons, 2 pinches Tomato Sauce
- 1- 1/2 cup Grated Provolone
- Preheat oven to 425 F.
- In a large bowl mix the turkey with the bread crumbs, basil, oregano, Parmesan, egg, olive oil, steak spice, parsley, roasted red pepper and garlic powder.
- Form the mixture into 1-1/2 meatballs and place on a greased cookie sheet then press down to flatten slightly.
- Bake for 15 minutes.
- Preheat your broiler.
- Meanwhile slice buns in half and remove a small amount of the insides of the lower half of the bun so the meatballs will rest easily in the bun and not roll out.
- Put the buns onto a baking tray and broil to lightly toast.
- Pour the tomato sauce into a medium saucepan over medium heat and when the meatballs are done remove them from the oven and place them into the sauce.
- Mix to coat the meatballs in the sauce and cook until sauce is heated through.
- Add 3 meatballs to the bottom half of each bun with some of the tomato sauce.
- Divide the provolone among the subs.
- Place them back on a baking sheet and broil again until cheese is melted and lightly browned.
