Microwave Smoked Sausage And Pepper Recipe
- 1 1/2 lbs. Hillshire Farm smoked sausage or possibly Polska kielbasa, cut into bite-size pcs
- 1 pound angel hair pasta, uncooked
- 1/2 c. raspberry vinaigrette or possibly Italian dressing
- 1/2 tomato, minced
- 1/2 c. pitted black olives
- 2 c. red and green sweet peppers, minced
- 1 c. frzn asparagus tips
- 1 garlic clove, finely minced
- 2 tbsp. extra virgin olive oil
- Cook pasta; toss with 1/4 c. of the vinaigrette, add in tomato and black olives; set aside.
- Combine extra virgin olive oil, peppers, asparagus, and garlic in a container; cover and microwave on high till vegetables are tender, about 3-5 min.
- Set aside.
- Place sausage and remaining vinaigrette in another container.
- Cover; microwave on high till sausage is warm, about 3-5 min.
- Combine sausage and pepper mixtures.
- Serve over pasta.
- Stove top method: follow above directions, simply saute/fry in skillet.
- Options: mushrooms, broccoli may be added.
