Spaghetti with Sausage, Arugula, and Jalapeno

  1. In a large skillet, heat 1 teaspoon of olive oil over medium heat.
  2. Add the sausage, casings removed, and cook, breaking up the meat, until no longer pink, 3 minutes.
  3. Add the remaining 3 tablespoons of olive oil and the garlic and cook until fragrant.
  4. Add the jalapenos and sun-dried tomatoes and cook 1 minute.
  5. Remove from the heat and cover.
  6. Meanwhile, boil the spaghetti until al dente.
  7. Drain, reserving the pasta water, and return to the pot.
  8. Reheat the sausage, stir in half of the reserved water, then add it to the pot.
  9. Stir over medium-high heat, adding the remaining water, until a sauce forms, 1 minute.
  10. Season with salt and pepper.
  11. Add the grated Parmesan and arugula.
  12. Stir until wilted and serve.
