Spaghetti with Sausage, Arugula, and Jalapeno
- 3 tbsp. olive oil
- 1 tsp. olive oil
- 3/4 lb. Italian sausage
- 4 clove garlic
- 2 jalapenos
- 13 c. oil-packed sun-dried tomatoes
- 3/4 lb. spaghetti
- 3/4 c. pasta water
- 1/2 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. grated Parmesan
- 4 oz. arugula
- In a large skillet, heat 1 teaspoon of olive oil over medium heat.
- Add the sausage, casings removed, and cook, breaking up the meat, until no longer pink, 3 minutes.
- Add the remaining 3 tablespoons of olive oil and the garlic and cook until fragrant.
- Add the jalapenos and sun-dried tomatoes and cook 1 minute.
- Remove from the heat and cover.
- Meanwhile, boil the spaghetti until al dente.
- Drain, reserving the pasta water, and return to the pot.
- Reheat the sausage, stir in half of the reserved water, then add it to the pot.
- Stir over medium-high heat, adding the remaining water, until a sauce forms, 1 minute.
- Season with salt and pepper.
- Add the grated Parmesan and arugula.
- Stir until wilted and serve.
