Cashew Corn Crunch Clusters
- 1/2 cup Land O Lakes Butter
- 2/3 cup firmly packed brown sugar
- 1 tablespoon light corn syrup
- 1/4 teaspoon vanilla
- 3 cups crisp corn cereal squares
- 1 cup lightly salted cashews
- Line 2 baking sheets with waxed paper.
- Set aside.
- Melt butter in 3-quart saucepan 2-3 minutes over low heat, stirring constantly.
- Stir in brown sugar and corn syrup.
- Increase heat to medium.
- Cook, stirring constantly, 1-2 minutes or until mixture comes to a full boil.
- Boil 1 minute.
- Remove from heat.
- Stir in vanilla.
- Add cereal and cashews; gently stir until well coated.
- Drop mixture by rounded tablespoonfuls onto prepared baking sheets.
- Cool completely.
- Variation: Cashew Corn Crunch Bars: Double all ingredients.
- Spray 13x9-inch pan with no-stick cooking spray.
- Spread cereal mixture into prepared pan.
- Cool completely.
- Cut into bars.
