Cashew Corn Crunch Clusters

  1. Line 2 baking sheets with waxed paper.
  2. Set aside.
  3. Melt butter in 3-quart saucepan 2-3 minutes over low heat, stirring constantly.
  4. Stir in brown sugar and corn syrup.
  5. Increase heat to medium.
  6. Cook, stirring constantly, 1-2 minutes or until mixture comes to a full boil.
  7. Boil 1 minute.
  8. Remove from heat.
  9. Stir in vanilla.
  10. Add cereal and cashews; gently stir until well coated.
  11. Drop mixture by rounded tablespoonfuls onto prepared baking sheets.
  12. Cool completely.
  13. Variation: Cashew Corn Crunch Bars: Double all ingredients.
  14. Spray 13x9-inch pan with no-stick cooking spray.
  15. Spread cereal mixture into prepared pan.
  16. Cool completely.
  17. Cut into bars.
