SugaMamas Green Eggs & Ham (Kale & Bacon Omelette)
- 5 large Eggs
- 1 cup Kale
- 1/2 cup Cheese
- 1/2 packages Cooked Bacon
- 1/4 cup Red Onion
- 1/4 cup Mushrooms
- Cook Bacon.
- Drain & Set aside.
- Sautee Onions, Mushrooms & Kale together with 1 tablespoon of butter (I used Can't Believe It's Not Butter).
- Turn off fire.
- Beat 5 eggs in a bowl with a tablespoon or 2 of warm water & spices (ie, rosemary, pepper, garlic powder)...Pour in pan with veggies....turn fire back on low heat.
- Make sure you spread veggies around evenly... add 3-4 strips of bacon (can be broke in halves if too much bacon....not!
- )....sprinkle cheese on bacon.... flip 1/2 side of omelette over other side...flip on other side after 1-2 minutes... sprinkle remaining cheese on top.
- enjoy!
- *can add slices of avocado & a spoonful of sour cream to add extra flavor!
