Beef Fajitas Recipe
- 1 lb skirt steak or possibly flank steak, cut with the grain in 2 inch strips Marinade (such as Goya Mojo Criollo)
- 6 x white mushrooms, sliced
- 1 x green or possibly red pepper, cut into strips
- 1 med onion, cut into strips
- 3 Tbsp. extra virgin olive oil
- 1/2 tsp all-purpose seasoning with pepper
- 8 x (6 inch) flour tortillas
- Garnishes: Black olives (sliced), salsa picante, lowfat sour cream and/or possibly guacamole
- Preheat oven to 350 degrees.
- In a non-reactive container, marinate steak.
- The longer it marinates the better the taste.
- Chill till ready to use.
- In a skillet on medium, heat 2 Tbsp.
- oil and cook onion and mushroom till onions are golden brown.
- Add in 1 Tbsp.
- oil to skillet and turn heat to medium-high.
- Cook steak till desired doneness.
- Remove from skillet and allow to rest for a few min before cutting, against the grain, into thin slices.
- Sprinkle tortillas with a few drops, wrap in foil and hot in preheated oven for 5 min.
- On a large platter, arrange steak, onion mix and garnishes.
- Keep tortillas hot in foil or possibly napkin into center of tortilla.
- Add in desired garnishes, and wrap.
