Beet Pancakes Recipe

  2. In a medium bowl, whisk the Large eggs.
  3. Fold in the grated beets, flour, sugar, dill, and salt and pepper to taste.

  5. Heat about 1/4-inch of oil in a large skillet over moderately high heat.
  6. For each pancake, place a heaping Tbsp.
  7. of batter in the warm skillet.
  8. Use a spatula to press down on the batter to create flat pancakes, and cook about 1-1/2 min on each side.
  9. Serve with lowfat sour cream.
  10. Yield: 12 to 14 pancakes
