Stove Top Meat Loaf(No Egg)
- 1 lb. ground beef (chuck)
- 1 can V-8 juice (large)
- 1 tsp. parsley flakes
- 1/2 Tbsp. black pepper
- 1/2 tsp. oregano
- 1 c. cornflakes, crumbled
- 1 c. flour
- 1 tsp. black pepper
- 1 Tbsp. olive oil
- 2 large bay leaves
- salt (optional)
- Season flour with 1/2 teaspoon of black pepper.
- Crumble beef in a large bowl; add parsley flakes, 1/2 tablespoon black pepper and oregano; mix well.
- Add cornflakes and mix well.
- Add enough V-8 juice slowly to bind mixture; mix well and form into large, round loaf.
- Dredge in seasoned flour.
- Brown on both sides in skillet with olive oil using medium-high heat.
- Place bay leaves on top.
- Pour 1 cup of V-8 juice over loaf.
- Cover.
- Lower heat to medium-low.
- Baste frequently using extra V-8 juice as needed. Cook for 50 to 60 minutes.
