Lime Granita

  1. In a medium, nonreactive saucepan, mix 1/2 cup (125 ml) of the water with the sugar.
  2. Grate the zest of 2 limes into the saucepan.
  3. Heat, stirring frequently, until the sugar is completely dissolved.
  4. Remove from the heat, add the remaining 2 1/2 cups (625 ml) water, and then chill in the refrigerator.
  5. Stir the lime juice into the sugar syrup, then freeze according to the instructions for freezing granita on page 145.
  6. Lime Granita is a tropical treat with Mango Sorbet (page 108) or Avocado Ice Cream (page 95).
