Hg's Feta 'n Fuji Chicken Salad
- 4 cups romaine lettuce, chopped
- 3 ounces lean chicken breasts, chopped
- 12 fuji apple, cored and chopped
- 14 cup cucumber, chopped
- 14 cup canned beets, drained, sliced
- 3 tablespoons feta cheese, reduced fat
- 1 tablespoon honey mustard
- 1 tablespoon mayonnaise, fat-free
- 1 teaspoon cider vinegar
- black pepper
- Place lettuce in large bowl and evenly top with remaining ingredients.
- Set aside.
- In small bowl, combine dressing and mix well.
