Daya's Healthy Pancakes
- 12 cup whole wheat flour
- 12 cup white flour
- 1 teaspoon baking powder
- 14 teaspoon baking soda
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 1 tablespoon canola oil
- 1 cup milk
- 1 tablespoon white vinegar
- 1 egg
- 14 cup chocolate chips (or blueberries)
- 2 tablespoons butter (just enough for cooking)
- Combine dry ingredients in a medium size bowl.
- Combine milk and vinegar in a separate cup (to make buttermilk).
- Form a well to add the buttermilk and the remaining wet ingredients (reserve butter & chocolate chips for later).
- Whisk together pancake mix just until smooth.
- Heat some of the butter in pan for cooking.
- When good and hot, add 1/4 C of the mix to pan to form each pancake, then sprinkle with some of your chocolate chips.
- Flip pancake as you see bubbles form on top.
- Serve with real maple syrup!
