Stovetop Pork Chops with Dijon & Soy Gravy

  1. Mix together the soy sauce, Dijon mustard and Worcestershire sauce in a large bowl to make a marinade.
  2. Add all the chops and let them sit in the marinade for 5 to 10 minutes.
  3. Heat the olive oil in a large skillet and saute the chops over medium high heat until they are golden brown on both sides.
  4. Add the mushrooms, onions and green peppers to the pan with the chops and saute for 2 to 3 minutes.
  5. Pour all the remaining marinade into the pan, cover the pan and reduce the heat to medium.
  6. Let it simmer for 10 to 15 minutes until all the veggies are thoroughly cooked and the sauce has thickened.
  7. Remove lid, sprinkle shredded cheese all over the chops and cook for 1 to 2 minutes more or until all the cheese is melted.
  8. Serve with rice or mashed potatoes.
  9. The marinade turns into a wonderfully flavorful gravy!
