Baked Apples With Philly Custard
- 4 apples (Pink lady or lady Williams)
- 250 ml dessert wine
- 1 cinnamon stick
- 14 cup brown sugar
- 250 g cream cheese spread
- 12 cup milk
- 2 tablespoons caster sugar
- 1 vanilla bean, split
- 1 tablespoon custard powder, blended with
- 1 tablespoon milk, to form a paste
- 1 teaspoon arrowroot
- CUT apples into three slices, place into a large shallow baking dish with the wine and cinnamon.
- Sprinkle over the brown sugar.
- Bake at 180C for 20 minutes until tender.
- Spooning the syrup over the apples occasionally.
- WHISK together the cream cheese and milk.
- Heat in a saucepan.
- Add sugar, vanilla bean and custard powder paste.
- Bring to the boil, stirring until thickened.
- REMOVE apples from syrup, and keep warm.
- Pour syrup into a small saucepan.
- Combine arrowroot with some of the syrup to form a paste.
- Add to saucepan, and simmer until thickened.
- Serve apple slices with syrup and custard.
