Hearty Vegetable Barley Soup Recipe
- Approx. 1 gal. water
- 2 1/2 pound shin beef with bone
- 2 lg. onions, minced sm.
- 3 potatoes, minced sm.
- 4 carrots, minced sm.
- 4 celery stalks, minced sm.
- 1 (28 ounce.) can crushed tomatoes
- 1 c. cabbage, minced sm.
- 1 c. frzn peas
- 1 c. barley
- Salt & pepper to taste
- Combine all ingredients at once except peas.
- Partially cover and simmer for 3 hrs.
- Stir occasionally.
- Add in peas during the last half hour.
