sig's crockpot meatballs with chorizo sauce
- 250 grams each lean minced beef and minced pork
- 55 grams breadcrumbs
- 4 large clove of garlic,crushed
- 2 eggs beaten
- 3 tbsp finely chopped parsely
- 1/4 tsp ground cinnamom
- 1 good pinch each salt and pepper
- 1/2 tbsp mild paprika powder
- 1/2 tbsp onion powder
- 3 tbsp plain white flour for dusting
- 1 tbsp garlic olive oil
- 300 grams frozen peas thawed
- 1 large brown onion finely chopped
- 1 large red onion,finely chopped
- 400 grams cooking chorizo skinned and diced
- 600 ml passata or tinned chopped tomatoes
- add meat eggs spices and herbs into bowl with salt and pepper mix well using your hands .Divide into 20 equal balls.
- turn the meatballs in the flour to coat them
- heat oil ,fry the balls for about 5 minutes until browned all over,transfere to slow cook/ crock pot
- pour of excess fat from pan leaving about 1-2 tablespoons add onions,cook for two minutes ,add garlic.and chorizo, cook for 3 minutes,add tomato sauce ,bring to boil.Transfere to crockpot
- cover the pot cook on low for 4 hours.Add the peas ,turn cooker to high cook for 15 minutes
- season sauce and serve with rice or pasta.
- if you want to check on seasoning for meatballs,cook a little of the meat before you make the balls and taste it.
