Bimini Chicken

  1. In a large saute pan, heat vegetable oil to medium high heat.
  2. Saute onions and shallots for 1 minute.
  3. Add the chicken and saute until almost cooked, about 4 to 5 minutes.
  4. Add the bananas and walnuts.
  5. Remove from the heat and deglaze the pan with bourbon.
  6. Add the cream of coconut and simmer for 2 minutes.
  7. Serve immediately.
