Broccoli, Cheese & Rice Casserole Recipe
- 1 stick butter
- 1/2 c. minced onions
- 4 boxes minced broccoli, thawed
- 2 cans cream of mushroom soup
- 2 cans lowfat milk (measured in soup cans)
- 7 ounce. box Minute Rice, uncooked
- 16 ounce. Velveeta cheese, cut into cubes
- In large pot, heat butter.
- Saute/fry onions in butter.
- Add in broccoli and saute/fry till mix is warm.
- Add in soup, lowfat milk, rice and cheese.
- Stir till cheese is melted into mix.
- Bake in 13 x 9 inch pan at 350 degrees for 1 hour or possibly till lightly brown on top.
