Lemon Crusted Baked Cod
- 3 whole Cod Fillets, About 3 Inches Wide Each And Skin Removed
- 3 Tablespoons Butter
- 2 cloves Garlic, Crushed
- 1 cup Bread Crumbs
- 1 Lemon, Zest And Juice
- 1 teaspoon Dried Oregano
- 2 Tablespoons Fresh Chopped Parsley
- 1/2 teaspoons Salt
- 1/2 teaspoons Fresh Ground Black Pepper
- Preheat oven to 350 degrees F. Place cod fillets in an oven proof dish and set aside.
- In a small skillet set over low heat, melt butter and add garlic.
- Cook for about 2 minutes until garlic is sizzling.
- Remove from heat.
- In a large bowl, combine bread crumbs, lemon zest, dried oregano, parsley, salt, pepper and garlic butter.
- Give a good stir until it is combined.
- Squeeze lemon juice over cod fillets and top each fillet with the bread crumb mixture.
- Bake for about 20 minutes until cod is cooked through and the topping is golden brown and crispy.
- Remove from oven and serve immediately.
