Black Beans Rancheros Recipe

  1. Heat extra virgin olive oil and sherry in skillet over medium-high heat till simmering.
  2. Add in garlic, onion, bell pepper, and cumin.
  3. Cook 5 min, stirring frequently.
  4. Add in beans and cilantro; remove from heat, set aside.
  5. Cook each tortilla in large skillet or possibly griddle over medium-high heat till lightly browned.
  6. Turn tortilla over and place 1/3 c. bean mix into center; top with 2 Tbsp each salsa and cheese.
  7. Cover skillet or possibly griddle and continue cooking till cheese melts.
  8. Season to taste with Tabasco sauce.
