Shrimp Gumbo Soup Recipe
- 5 quart. chicken broth (stock)
- 8 ounce. diced celery
- 8 ounce. diced onion
- 4 ounce. diced green pepper
- 2 ounce. oil
- 4 ounce. rice
- 28 ounce. can diced tomatoes with juice
- 4 c. diced, cooked chicken
- 20 ounce. cut frzn okra
- 2 lbs. lg. raw shrimp, cleaned, tails off
- In a large soup pot, saute/fry celery, green pepper and onion till tender.
- Add in chicken broth and rice.
- Cook till rice is done, about 1/2 hour.
- Add in tomatoes, simmer 5 min, add in diced cooked chicken, okra and shrimp.
- Simmer till shrimp is pink and cooked.
- Crab meat can be substituted.
